Craving comfort food but want to keep it low-carb and keto-friendly? This Cheesy Air Fryer Meatloaf is perfect for satisfying those cravings while staying on track. It’s juicy, cheesy, and has the perfect caramelized topping—all made quickly and easily in your air fryer.

Ingredients:

  • 1 lb ground beef (85% lean or higher)
  • 1/2 cup almond flour (or crushed pork rinds for extra flavor)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 1/4 cup sugar-free ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Meatloaf Mixture
In a large mixing bowl, combine ground beef, almond flour, egg, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Stuff with Cheese
Flatten the mixture on a sheet of parchment paper into a rectangle. Sprinkle shredded mozzarella cheese over the center. Fold the edges over the cheese to seal it inside, shaping it into a loaf.
  3. Preheat Your Air Fryer
Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  4. Cook the Meatloaf
Place the meatloaf on a piece of parchment paper or in a small air fryer-safe pan. Cook for 20 minutes.
  5. Add Topping
Remove the meatloaf from the air fryer and spread sugar-free ketchup on top. Add extra mozzarella cheese on top of the ketchup. Place it back in the air fryer and cook for another 5–7 minutes or until the cheese is melted and slightly golden.
  6. Rest and Serve
Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite low-carb sides, like roasted vegetables or a fresh salad.

Tips for Success:

  • Avoid Overmixing: Overworking the meat mixture can make the meatloaf dense. Mix just until combined.
  • Use a Meat Thermometer: The internal temperature should reach 160°F (71°C) for perfectly cooked meatloaf.
  • Customize: Add diced onions, bell peppers, or even jalapeños for extra flavor.

Enjoy this cheesy, hearty dish that’s sure to become a family favorite!ized for readability and provides a complete, professional presentation of the dish.
