Ingredients
Wonton Wrappers
- 50–60 wonton wrappers
- (Find these in the refrigerator section of your grocery store for convenience.)
Wonton Filling
- 200 g (7 oz) lean pork mince (ground pork)
- 200 g (7 oz) prawns or shrimp, peeled and roughly chopped
- 1 tbsp ginger, finely grated (1.5″ / 3 cm piece)
- 2 shallots or green onions, finely chopped (5 tbsp)
- 1 tbsp light soy sauce
- 2 tbsp Chinese cooking wine (Shaoxing wine)
- 1/2 tsp salt
- 2 tbsp toasted sesame oil
Broth (For 2 Servings)
- 3 cups / 750 ml chicken broth
- 2 garlic cloves, smashed
- 1/3” / 1 cm piece of ginger, sliced (optional)
- 1½ tbsp light soy sauce
- 2 tsp sugar
- 1½ tbsp Chinese cooking wine
- 1/4–1/2 tsp sesame oil
To Serve
- Finely chopped shallots or scallions
- Bok choy (quartered) or Chinese broccoli cut into 4″ lengths (optional)
- 40–50 g dried egg noodles per person (optional)
Instructions
Step 1: Prepare the Wontons
- Make the Filling:
- Place all filling ingredients in a mixing bowl. Use a potato masher to mash the ingredients until fairly smooth, leaving small prawn chunks for added texture.
- Wrap the Wontons:
- Spoon about 1-2 teaspoons of filling onto each wonton wrapper. Brush two edges with water, fold, and press to seal, ensuring no air bubbles. Bring corners together, press to seal, and place wrapped wontons into a container with a lid to prevent drying out.
Step 2: Cook or Freeze Wontons
- To Cook:
- Bring a large pot of water to boil. Add wontons and cook for 4 minutes or until they float to the top. Remove with a slotted spoon and place in serving bowls.
- To Freeze:
- Freeze uncooked wontons in an airtight container. When ready to cook, boil frozen wontons for 6-8 minutes. Note: Do not freeze if using defrosted frozen prawns.
Step 3: Prepare the Broth
- Simmer Ingredients:
- Place all broth ingredients in a saucepan over high heat. Cover, bring to a simmer, then reduce heat and simmer for 5-10 minutes. Remove smashed garlic and ginger slices before serving.
- Blanch Vegetables (if using):
- Blanch bok choy or Chinese broccoli in the broth for added color and flavor.
Step 4: Assemble the Soup
- Prepare Noodles (optional):
- Cook noodles according to package instructions and place in serving bowls.
- Serve:
- Add cooked wontons and blanched vegetables to serving bowls. Ladle hot broth over everything and garnish with finely chopped scallions.
Recipe Notes
- Wonton Wrappers: Available in the refrigerated section of most grocery stores. If using only one packet, reduce filling accordingly.
- Soy Sauce: Substitute with 1 tbsp + 1 tsp all-purpose soy sauce if needed.
- Chinese Cooking Wine: Adds depth. Substitute with sherry, cooking sake, or Mirin if unavailable.
- Sesame Oil: Use toasted sesame oil for a richer flavor.
- Chicken Broth: For best results, use Asian-style chicken broth if available.
