Weight Watchers Lemon Pound Cake.
Ingredients:
- 1 cup all-purpose flour (or almond flour for lower carbs)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup light butter, melted
- 3 large eggs
- 1/2 cup sugar substitute (like Swerve)
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract

Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
Mix Wet Ingredients: In a large bowl, beat eggs, sugar substitute, applesauce, butter, lemon juice, zest, and vanilla extract.
Combine & Bake: Gradually add dry ingredients to wet mixture until smooth. Pour into loaf pan and bake for 40-45 minutes.
