- ½ cup sliced green onions (for garnish)
- Jalapeño slices (optional, for garnish)
Instructions
Step 1: Prepare the Taco Meat
- In a large skillet, cook the ground beef and diced onion over medium heat until the meat is browned and cooked through, breaking it up with a spoon as it cooks.
- Drain any excess fat from the meat, then stir in the taco seasoning, diced tomatoes, tomato sauce, frozen corn, and black beans (if using).
- Simmer for 5 minutes, stirring occasionally, to allow the flavors to combine.
Step 2: Layer the Casserole
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
- Spread the crushed tortilla chips evenly across the bottom of the dish.
- Top with the taco meat mixture, spreading it out evenly.
- Sprinkle 1 ½ cups of the shredded cheddar cheese on top of the meat mixture.
Step 3: Bake the Casserole
- Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Remove the casserole from the oven and sprinkle the remaining ½ cup of shredded cheese on top. Return to the oven for 5 more minutes to melt the cheese.
Step 4: Garnish and Serve
- Remove from the oven and let the casserole cool for 5 minutes.
- Top with a dollop of sour cream, salsa, shredded lettuce, diced tomatoes, green onions, and optional jalapeños.
- Serve hot and enjoy!
