
🍤 Keto Shrimp Cocktail (Low-Carb & Sugar-Free)

🛒 Ingredients:
For the Shrimp:
- 1 lb large shrimp, peeled and deveined (tails on or off)
- 1 tbsp olive oil or butter
- 1/2 tsp paprika
- Salt & pepper to taste
- Optional: 1 slice lemon, 1 bay leaf (for boiling method)
For the Keto Cocktail Sauce:
- 1/2 cup sugar-free ketchup (look for <2g carbs per serving)
- 2 tbsp prepared horseradish (check label for no added sugar)
- 1 tsp lemon juice
- 1/4 tsp hot sauce (like Tabasco – optional)
- Salt & pepper to taste
👩🍳 Instructions:
1. Cook the Shrimp (2 methods):
Boil Method (classic):
- Bring a pot of water to a boil with lemon slice and bay leaf (optional).
- Add shrimp and boil for 2–3 minutes until pink and just cooked.
- Drain and immediately transfer to an ice bath to stop cooking.
Pan-Sear Method (more flavor):
- Toss shrimp with olive oil, paprika, salt, and pepper.
- Sauté in a skillet over medium heat for 2–3 minutes per side until pink and cooked through.
- Cool before serving.
2. Make Keto Cocktail Sauce:
In a bowl, mix:
- Sugar-free ketchup
- Horseradish
- Lemon juice
- Hot sauce (if using)
- Salt & pepper
Taste and adjust to your preferred spice level.
3. Serve:
- Arrange chilled shrimp around a small dish of the cocktail sauce.
- Garnish with lemon wedges and chopped parsley if desired.
