- 2 large eggs

- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, garlic powder, and salt.
- Add Wet Ingredients: In another bowl, whisk the eggs and olive oil together. Then add this mixture to the dry ingredients and mix until a dough forms. If using mozzarella cheese, fold it in at this point.
- Shape the Flatbreads: Divide the dough into 4 equal portions. Roll each portion into a ball and flatten it into a disc about ¼ inch thick. Place the discs on the prepared baking sheet.
- Brush with Olive Oil: Lightly brush the tops of the flatbreads with olive oil. You can also sprinkle some garlic powder or herbs on top for extra flavor.
- Bake: Bake in the preheated oven for 12-15 minutes, or until golden brown.
- Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve warm. Enjoy with your favorite dips or as a side with your meal!
