- 3/4 cup granulated sweetener (erythritol or monk fruit)
- 3 large eggs (room temperature)
- 1/3 cup sour cream
- 1 tbsp vanilla extract
- 1 tbsp lemon juice (optional, for extra tang)
Instructions:
1. Preheat Oven:
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2. Make the Crust:
- In a bowl, mix almond flour, melted butter, sweetener, and vanilla extract.
- Press evenly into the bottom of the springform pan. Bake for 8-10 minutes until lightly golden. Set aside to cool.
3. Make the Filling:
- In a large bowl, beat the cream cheese and sweetener until smooth and creamy.
- Add eggs one at a time, mixing gently after each addition. Avoid overmixing.
- Mix in sour cream, vanilla extract, and lemon juice (if using).
4. Bake the Cheesecake:
- Pour the filling over the cooled crust.
- Place the pan in a water bath (optional for even baking).
- Bake for 60-70 minutes or until the edges are set but the center is slightly jiggly.
5. Cool & Chill:
- Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour.
- Refrigerate for at least 4-6 hours, preferably overnight.
