Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup unsalted butter, melted

  • 3/4 cup granulated sweetener (erythritol or monk fruit)
  • 3 large eggs (room temperature)
  • 1/3 cup sour cream

  • 1 tbsp lemon juice (optional, for extra tang)

Instructions:

1. Preheat Oven:

  • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

2. Make the Crust:

  • In a bowl, mix almond flour, melted butter, sweetener, and vanilla extract.
  • Press evenly into the bottom of the springform pan. Bake for 8-10 minutes until lightly golden. Set aside to cool.

3. Make the Filling:

  • In a large bowl, beat the cream cheese and sweetener until smooth and creamy.
  • Add eggs one at a time, mixing gently after each addition. Avoid overmixing.
  • Mix in sour cream, vanilla extract, and lemon juice (if using).

4. Bake the Cheesecake:

  • Pour the filling over the cooled crust.
  • Place the pan in a water bath (optional for even baking).
  • Bake for 60-70 minutes or until the edges are set but the center is slightly jiggly.

5. Cool & Chill:

  • Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour.
  • Refrigerate for at least 4-6 hours, preferably overnight.
