🥓 Keto Breakfast Sausage & Guacamole Stacks

🛒 Ingredients:

  • 8 breakfast sausage patties (store-bought low-carb or homemade)
  • 1 ripe avocado
  • 1 tbsp lime juice
  • 2 tbsp finely diced red onion
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tbsp chopped fresh cilantro
  • Salt & pepper to taste
  • 4 large eggs
  • 1 tbsp olive oil or butter
  • Optional toppings: shredded cheddar cheese, salsa, hot sauce

🔪 Instructions:

  1. Make the guacamole:
    In a bowl, mash the avocado with lime juice. Stir in red onion, jalapeño (if using), cilantro, salt, and pepper. Set aside.
  2. Cook the sausage patties:
    In a skillet over medium heat, cook the sausage patties until browned and cooked through (about 4–5 minutes per side). Remove and keep warm.
  3. Cook the eggs:
    In the same skillet, heat olive oil or butter. Cook eggs to your liking — fried, scrambled, or sunny-side up all work great.
  4. Assemble the stacks:
    On each plate, layer a sausage patty, a generous spoonful of guacamole, and top with an egg.
  5. Add optional toppings:
    Sprinkle with shredded cheese, salsa, or hot sauce if you like some extra flavor.

🍽️ Serving ideas:

  • Serve with sautéed spinach or kale on the side
  • Add a handful of cherry tomatoes for freshness
