
🥓 Keto Breakfast Sausage & Guacamole Stacks

🛒 Ingredients:
- 8 breakfast sausage patties (store-bought low-carb or homemade)
- 1 ripe avocado
- 1 tbsp lime juice
- 2 tbsp finely diced red onion
- 1 small jalapeño, seeded and minced (optional)
- 2 tbsp chopped fresh cilantro
- Salt & pepper to taste
- 4 large eggs
- 1 tbsp olive oil or butter
- Optional toppings: shredded cheddar cheese, salsa, hot sauce
🔪 Instructions:
- Make the guacamole:
In a bowl, mash the avocado with lime juice. Stir in red onion, jalapeño (if using), cilantro, salt, and pepper. Set aside. - Cook the sausage patties:
In a skillet over medium heat, cook the sausage patties until browned and cooked through (about 4–5 minutes per side). Remove and keep warm. - Cook the eggs:
In the same skillet, heat olive oil or butter. Cook eggs to your liking — fried, scrambled, or sunny-side up all work great. - Assemble the stacks:
On each plate, layer a sausage patty, a generous spoonful of guacamole, and top with an egg. - Add optional toppings:
Sprinkle with shredded cheese, salsa, or hot sauce if you like some extra flavor.
🍽️ Serving ideas:
- Serve with sautéed spinach or kale on the side
- Add a handful of cherry tomatoes for freshness
