🥓 Easy Keto Chicken Cordon Bleu (Low-Carb)

🛒 Ingredients:

  • 4 boneless, skinless chicken breasts (thinly sliced or pounded)
  • 4 slices ham (sugar-free or deli-style)
  • 4 slices Swiss cheese (or mozzarella/provolone)
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 egg (beaten)
  • 1 tsp Dijon mustard (optional, for flavor)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp butter or olive oil for frying

🔪 Instructions:

  1. Prep chicken:
    • Pound chicken breasts to about 1/2-inch thick.
    • Season lightly with salt, pepper, garlic powder, and paprika.
  2. Assemble:
    • Place 1 slice of ham and 1 slice of cheese on each chicken breast.
    • Roll up tightly and secure with toothpicks.
  3. Bread coating:
    • In one bowl: mix almond flour and parmesan cheese.
    • In another: beat egg with a little Dijon mustard (optional).
    • Dip each chicken roll in egg, then coat in almond flour mix.
  4. Pan-fry:
    • Heat butter/oil in a skillet over medium heat.
    • Sear chicken rolls for 2–3 minutes per side until golden.
  5. Bake:
    • Transfer to an oven-safe dish.
    • Bake at 375°F (190°C) for 20–25 minutes until chicken is cooked through (165°F internal temp).

🧀 Optional Keto Cream Sauce:

Make a simple sauce while the chicken bakes:

  • 1/2 cup heavy cream
  • 1/4 cup shredded Swiss or parmesan
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Simmer on low heat until thick and creamy, then drizzle over chicken.
