🍋 Keto Creamy Chicken Scampi (Olive Garden Style)

🛒 Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp lemon juice (fresh is best)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Zucchini noodles or shirataki noodles (for serving)

🔪 Instructions:

  1. Prepare chicken:
    Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Cook chicken:
    In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook 5-6 minutes per side until golden and cooked through. Remove and set aside.
  3. Make the sauce:
    In the same skillet, melt butter. Add minced garlic and sauté until fragrant (about 1 minute).
    Pour in chicken broth and lemon juice, scraping up any browned bits.
    Let simmer for 2-3 minutes.
  4. Add cream and cheese:
    Stir in heavy cream and Parmesan cheese. Simmer until sauce thickens slightly (about 3-5 minutes). Adjust seasoning with salt and pepper.
  5. Combine:
    Return chicken to skillet, spoon sauce over, and simmer another 2 minutes.
  6. Serve:
    Plate chicken over zucchini noodles or shirataki noodles. Spoon extra sauce on top and garnish with fresh parsley.
