🛒 Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp lemon juice (fresh is best)
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Zucchini noodles or shirataki noodles (for serving)
🔪 Instructions:
- Prepare chicken:
Season chicken breasts with salt, pepper, and Italian seasoning. - Cook chicken:
In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook 5-6 minutes per side until golden and cooked through. Remove and set aside. - Make the sauce:
In the same skillet, melt butter. Add minced garlic and sauté until fragrant (about 1 minute).
Pour in chicken broth and lemon juice, scraping up any browned bits.
Let simmer for 2-3 minutes. - Add cream and cheese:
Stir in heavy cream and Parmesan cheese. Simmer until sauce thickens slightly (about 3-5 minutes). Adjust seasoning with salt and pepper. - Combine:
Return chicken to skillet, spoon sauce over, and simmer another 2 minutes. - Serve:
Plate chicken over zucchini noodles or shirataki noodles. Spoon extra sauce on top and garnish with fresh parsley.
