Ingredients:
- 4 medium Yukon Gold or Russet potatoes
- 3 tbsp olive oil or melted butter
- 1 tsp garlic powder
- 1 tsp smoked paprika (or regular paprika)
- Β½ tsp onion powder
- Salt & black pepper to taste
- Fresh herbs (rosemary, thyme, or parsley) β optional
- Grated Parmesan (optional but amazing)

Instructions:
1. Preheat oven to 425Β°F (220Β°C).
Line a large baking sheet with parchment paper or foil for easy cleanup.
2. Prep the potatoes:
- Wash and dry the potatoes. Cut them in half lengthwise (so they lay flat).
- Place flat-side down and lightly score the rounded side with a sharp knife in a crisscross (diamond) pattern β donβt cut all the way through.
3. Season:
- In a small bowl, mix olive oil, garlic powder, paprika, onion powder, salt, and pepper.
- Rub or brush this mixture generously all over the scored side and the bottoms of the potatoes.
4. Bake:
- Place potatoes scored side up on the sheet pan.
- Bake for 35β45 minutes, until the insides are tender and the tops are golden and crispy.
5. Finish strong:
- Optional: Sprinkle grated Parmesan over the last 5 minutes of baking.
- Garnish with chopped fresh herbs for extra flavor and presentation.
