Air Fryer Sweet Potato Brownies
Ingredients:
1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
1/2 cup almond butter (or any nut butter of your choice)
1/4 cup maple syrup or honey
1/4 cup cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: 1/4 cup chocolate chips or chopped nuts for extra texture and flavor
Instructions:
Prepare the Sweet Potatoes:
Peel and cube the sweet potatoes.
Boil or steam them until soft (about 15-20 minutes).
Mash the sweet potatoes until smooth. You can also use a food processor for a smoother consistency.
Mix the Ingredients:
In a large bowl, combine the mashed sweet potatoes, almond butter, and maple syrup. Mix until well combined.
Add the cocoa powder, vanilla extract, baking soda, and salt. Mix until you have a smooth batter.
If desired, fold in the chocolate chips or nuts.
Preheat the Air Fryer:
Preheat your air fryer to 330°F (165°C) for about 5 minutes.
Prepare the Pan:
Line a small baking pan or dish that fits in your air fryer with parchment paper, or grease it well with cooking spray.
Pour the Batter:
Pour the brownie batter into the prepared pan and smooth the top with a spatula.
Air Fry the Brownies:
Place the pan in the air fryer basket.
Cook at 330°F (165°C) for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the brownies to cool in the pan for about 10 minutes.
Remove from the pan and let them cool completely on a wire rack before cutting into squares.
Enjoy:
Serve the brownies on their own or with a scoop of your favorite ice cream.
Tips:
Ensure the sweet potatoes are well mashed to avoid lumps in your brownies.
Adjust the sweetness to your liking by adding more or less maple syrup.
Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Enjoy your delicious and healthy sweet potato brownies made in the air fryer!
