Instructions

  • Line a small loaf tin (or two smaller ones, if your air fryer is compact) with baking parchment or a liner.

2. Make the Cake Batter

  • In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Sift the self-raising flour into the mixture and fold gently until smooth.
  • Stir in the milk and lemon zest to create a velvety batter.

3. Bake in the Air Fryer

  • Pour the batter into the prepared loaf tin(s). Smooth the surface with a spatula.
  • Place the tin in the air fryer basket and cook at 160°C (320°F) for 35–40 minutes, or until a skewer inserted in the center comes out clean.
  • If the top starts to brown too quickly, cover loosely with foil halfway through baking.

4. Prepare the Lemon Drizzle

  • While the cake bakes, mix the lemon juice and granulated sugar in a small bowl. Stir until the sugar begins to dissolve but still has a slight grainy texture.

5. Add the Drizzle

  • Once the cake is baked, remove it from the air fryer and poke small holes all over the top with a skewer or toothpick.
  • Slowly pour the lemon drizzle over the warm cake, allowing it to soak in.

6. Cool and Serve

  • Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
