🛒 Ingredients:
- 4 boneless, skinless chicken breasts (thinly sliced or pounded)
- 4 slices ham (sugar-free or deli-style)
- 4 slices Swiss cheese (or mozzarella/provolone)
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 egg (beaten)
- 1 tsp Dijon mustard (optional, for flavor)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
- 2 tbsp butter or olive oil for frying
🔪 Instructions:
- Prep chicken:
- Pound chicken breasts to about 1/2-inch thick.
- Season lightly with salt, pepper, garlic powder, and paprika.
- Assemble:
- Place 1 slice of ham and 1 slice of cheese on each chicken breast.
- Roll up tightly and secure with toothpicks.
- Bread coating:
- In one bowl: mix almond flour and parmesan cheese.
- In another: beat egg with a little Dijon mustard (optional).
- Dip each chicken roll in egg, then coat in almond flour mix.
- Pan-fry:
- Heat butter/oil in a skillet over medium heat.
- Sear chicken rolls for 2–3 minutes per side until golden.
- Bake:
- Transfer to an oven-safe dish.
- Bake at 375°F (190°C) for 20–25 minutes until chicken is cooked through (165°F internal temp).
🧀 Optional Keto Cream Sauce:
Make a simple sauce while the chicken bakes:
- 1/2 cup heavy cream
- 1/4 cup shredded Swiss or parmesan
- 1 tsp Dijon mustard
- Salt & pepper to taste
Simmer on low heat until thick and creamy, then drizzle over chicken.
