Like a mix of strawberry shortcake, cheesecake, and sweet rolls β in one mini treat!
π Ingredients (Makes 8β10 mini rolls)
For the Roll Dough (can be homemade or shortcut):
Option 1: Homemade (low-sugar version)
- 1 cup all-purpose flour or low-carb baking flour
- 1 tsp baking powder
- Pinch of salt
- 2 tbsp erythritol or sweetener
- 2 tbsp butter, melted
- β cup Greek yogurt or unsweetened almond milk (as needed to form dough)
Option 2: Shortcut
- Use low-sugar crescent dough or thin sliced low-carb tortillas as the base
For the Cheesecake Filling:
- 4 oz cream cheese, softened
- 2 tbsp powdered erythritol or monk fruit sweetener
- Β½ tsp vanilla extract
- Optional: 1 tbsp Greek yogurt for extra creaminess
For the Strawberry Filling:
- Β½ cup finely chopped strawberries
- 1 tsp erythritol or other sugar-free sweetener
- Β½ tsp lemon juice
- Optional: 1 tsp chia seeds (helps thicken naturally)

Step 1: Make Dough (if using homemade)
- Mix flour, baking powder, salt, and sweetener in a bowl.
- Stir in melted butter and Greek yogurt/almond milk until a soft dough forms.
- Roll out into a rectangle on a lightly floured surface, about ΒΌ inch thick.
Step 2: Prepare Fillings
Cheesecake Filling:
- Mix cream cheese, sweetener, vanilla (and yogurt if using) until smooth.
Strawberry Filling:
- Combine chopped strawberries, sweetener, and lemon juice.
- Microwave for 30β45 seconds or cook briefly in a pan until juicy and slightly thickened.
- Optional: stir in chia seeds and let sit 5 mins to gel.
Step 3: Assemble the Rolls
- Spread a thin layer of cheesecake mixture over the dough rectangle.
- Top evenly with the strawberry mixture.
- Roll up the dough from the long edge, like a jelly roll.
- Slice into 8β10 mini rolls.
Step 4: Bake
- Place rolls in a greased muffin tin or on a lined baking sheet.
- Bake at 350Β°F (175Β°C) for 15β18 minutes, or until golden and set.
Step 5: Cool & Glaze (Optional)
Let rolls cool slightly. Then drizzle with optional sugar-free glaze:

- 2 tbsp powdered erythritol
- 1 tsp milk (almond or dairy)
- Dash of vanilla extract
